Mushrooms with Herb Nut Butter

Right! I promised you a new recipe and here it is:

Mushrooms With Herb Nut Butter.

WHAT YOU NEED:

12 large mushroom caps - remove the stalks and chop them up finely.

These ingredients below will be processed for 20 - 30 seconds or until smooth.

1/4 cup blanched almonds

1 clove garlic

1 tablespoon of lemon juice

1/4 cup parsley sprigs

3 teaspoons of fresh thyme - chopped

3 teaspoons of rosemary - chopped

1 tablespoon chives - chopped

1/2 teaspoon of salt

1/4 teaspoon black pepper

75gm of butter - chopped

Now place the mushroom caps upside down in an oiled baking dish.

Heat 1 tablespoon of olive oil in a small pan and add one small onion finely chopped: stir and cook at a medium heat for 2-3 minutes until a golden brown.

Add the finely chopped mushroom stalks and cook for 2 minutes or until soft.

Remove from heat and spoon equal amounts of the onion and mushroom stalk mix into each mushroom cap. Spread smoothly.

Top these with the processed mixture of almonds etc.

Bake for 10 - 15 minutes at 180 degrees Centigrade or until cooked through and the butter has melted.

Garnish with some freshly picked Greek Basil and sliced red pepper and you're done!
